Our social media feeds are filled to the brim with air fryer recipes at the moment.
From sausage rolls that ‘rival’ Greggs to the ‘best ever’ crispy potatoes.
But did you know that you can make some of your favourite cakes in an air fryer too?
If lockdown didn’t put you off banana bread, we have an excellent one to try from Laura – AKA @cakeontherun on Instagram.

She’s created an air fryer banana bread recipe using just four ingredients – that’s not only vegan, but can be made gluten-free as well.
Her recipe serves four and is a slightly healthier option, coming in at 135 calories per slice.
She uses 100g of self-raising flour (which can also be achieved with all-purpose flour and baking powder), an overripe banana, 1/2 can of chickpea water (or 1 egg if you’re not vegan), and 2 tbsp of syrup.
Laura starts by draining the chickpeas and whisking the water until it’s foamy, or simply whisk the egg up if you’re using this instead.
Then mash the banana in a bowl and add flour, syrup and 5 tbsp of the chickpea water (or egg), and stir everything with a spoon until combined.
After, line a small oven-proof dish with baking parchment and pour the mixture in, before air frying on 180C for 13 mins.

If you don’t have an air fryer, you can bake in the oven for 15-20 minutes.
Laura also pops some decorative banana slices on top of the mixture, before it goes into the fryer, for an aesthetically-pleasing finish.
